Happy Thanksgiving!

THANK YOU FOR YOUR DELICIOUS COMMENTS YESTERDAY. NO TOFU FOR US, we will have all the trimmings instead: A vegetarian, chestnut, mushroom and apricot stuffing, homemade cranberry sauce, sweet potatoes with Grand Marnier, also a pumpkin, black bean and corn stew, wild rice, green beans with ginger and a homemade pumpkin pie (fresh pumpkin and I wish my mother was here to make the crust! Do you know how to make golden flakey pie crust?

note: The pie above is my mother's. I took a photo of it this summer…apricot is what is inside.

  15. I’m not good on crusts either but my grandmother could make the best pie crusts I ever had. For me, it’s the crust of the frozen variety. HA
    Your Thanksgiving dinner sounds wonderful. although I still eat meat, I like what you are serving. Yum.

  18. Though I can make pie crusts from scratch, usually I use the Pillsbury AllReady pie shells. Have a great Thanksgiving. The bean and corn stew sounds interesting-recipe please? Hmm would that be rice from Willows?

    Yes, I make pies with crust. We have one of each: pumpkin, pecan, and mincement/apple. They are all ready to share today. Come by and I will make a pie for you.

    My hubby is making his famous apple pie at this moment, with his delicious flaky crust… his secret is lard, I’m afraid, which wouldn’t fit the vegetarian-bill, but I’m sure lots of butter could be used in lieu of. =)

  26. See! The turkey is really the least interesting thing to eat at Thanksgiving. Can you give us the stuffing and stew recipes?
    My mother makes a great Pumpkin Pie with wonderful flaky crust– she says it’s something about using ice water…

  28. Could we please have the sweet potato with Grand Marnier recipe? Sounds wonderful. And I have found that vegetable shortening (which has trans fats unfortunately ) makes the best, flakiest crusts- also chill well, and handle as little as possible!

  30. Happy Thank Giving Corey! Directly from Portugal where it’s like in France, and we only watch “Thanks Giving” in the telly.
    Either way, we can always give thanks every day, when we wake up or when we’re going to sleep, isn’t it?

    We enjoy homemade cranberry sauce also…and I try a new recipe every year. And to tell the truth, I start making cranberry sauce in early November and don’t stop until late December! We love it!

  33. Corey, I have been a “semi” vegetarian for many years, but would like to become a “true vegetarian” as you are…if only I could cook like you do! That black bean and corn stew sounds delicious as well as everything else on your Thanksgiving dinner menu! You should write a cookbook, too. I am thankful to have your friendship on your beautiful blog.

  34. Corey, hope the day was wonderful for you all. I enjoyed amazing vegetables including – haricots verts with roasted cremini mushrooms and caramelized shallots, glazed sweet potatoes, asparagus, nutty cornbread stuffing etc., and didn’t miss turkey or tofu!!
    My mother made the best pastry crust – she always said it was because she had ‘cool hands’ – and she did! Pastry always needs to be kept cool for best results.

  37. I’d gotten Mushroom Pate along with some other small items to nibble on while we were cooking throughout the day. Kept being very impressed how good and hearty the Mushroom Pate was so finally out of curiousity I read the ingrediants. Turns out it was every day regular liver pate with mushrooms in it! Thank goodness there were no vegetarians with us for I would have felt terrible.

    Corey,
    Great pie crust is easy. Use two cups of flour mixed with one teaspoon salt to one cup of vegetable shortening. Use a wire pastry cutter and work the mix into a coarse mixture the size of peas. Then refrigerate. When you are ready, add a tablespoon or two of milk and using a fork, blend together but don’t work it too much. Roll into a ball, cut in half and roll out thin. Learned from my mother-in-law who made a mean pie!
    My wife and I enjoy your blog. We have a house in Gascony but cannot live there as we are in the States taking care of my 98 year old father-in-law. Reading blogs keeps us there in spirit.

    you have added so much joy to my life with your writting and photos that i wanted to share my pie story with you. my mother in law , an extaordinary pie baker, passed away two years ago. we had not had a decent pie since she left us. (i was piephobic) thanksgiving is now my responsibility and hence, the desert.long story short….found a great recipe in the “cooks illustrated” cookbook (the one with 2 1/2c. flour 1 1/2c (frozen grated)unsalted butter and 1/2c. shortening…but i used lard).i used an emile henry (the french make the best!) pie dish and baked my pumpkin pie on the floor of our oven. oh happy day,no soggy bottom crust! my pies will be an ode to my sweet mother in law. best wishes and warm thoughts, megan

  40. Hi, Corey – chiming in late to say Happy Thanksgiving. Your menu sounds wonderful and I hope that you and Sacha were happy even without the turkey. I don’t have a piecrust recipe, but plan to try the one at the cooking section of http://www.thepioneerwoman.com – it sounds like it might work.
