Strawberry Shortcake is such a spring thing. In France, they say the first strawberry you eat of the season you are to make a wish. I made mine today.
The French also converse in great lengths while comparing the Spanish strawberries to their glorious, worth waiting for, Strawberries from Carpentras.
I rarely wait, I'll eat any strawberry that comes my way… nevertheless, the strawberries from Carpentras are worth their weight in gold. But as wishes are concerned, I rather make mine sooner than later. Spanish strawberries seal the deal each year.

I have a pet peeve. I cannot stand to see someone cut too much off the top of a strawberry. It seems sacrilegious.

Chopped-strawberries

Strawberry Shortcake has two parts, the lush strawberries and the divine crust.

Gather the freshest strawberries, a couple of baskets full and a few to pop in your mouth will chopping them. Gently rinse the strawberries, take their green hats off, mash them lightly, just enough so they render their juice. Then sprinkle half of a cup of sugar, a couple of splashes of Grand Mariner, five or six chopped mint leaves,  and a cup of cream, the thicker the better.

Let them sit in a cool place for an hour or two.
If you gave up Sugar and booze for lent…. you might want to stop reading this post before you are tempted to break your promise.

For the shortbread crust, first finely, chop a handful of hazelnuts, then add half of a cup of soft butter, a cup of sugar, two large eggs, two cups of flour, and a teaspoon of baking powder. Mix lightly until it forms a ball. In a buttered (8X11) pan add some wax paper, and then gently pat the crust into place.
Bake for about 20 minutes on 350°

When it is golden, take it out of the oven and out of the pan, and let it cool somewhat before cutting it.

Make sure the knife reaches to the center of the cake. I am so glad I thought of that before, You want to take the top off and add strawberries to the bottom half.

  5. YummO! The first strawberries were being sold along the roadside here in the San Joaquin Valley. Glorius Watsonville strawberries. Not Spanish but I bet they have a bit of an accent tho! 😉 My love of strawberries rivals yours. As a child growing up in rural Pennsylvania, picking from the local fields it was “one for the basket, two for me, one for the basket, three for me!!” Speaking of baskets those pictured are amazing . Going to have to try adding chopped hazelnut to the shortbread mixture.

    This looks so GOOD! And I’ve had those strawberries from Carpentras… I wish you could send some my way. Our Minnesota berries do not compare. If I close my eyes, I can almost smell them.

    i usually make 6 or 8 little ones with the recipe on the back of the bisquick box and they’re so easy and so good.

  11. You mean you don’t use a strawberry huller? Should I mail one to you? You can use it to tweeze the stem out/losing as little of the berry as possible. The recipe sounds fantastic. I’ll never forget the best strawberries ever-at a restaurant in Rome when I was 17. The size of a quarter, vibrant red and utterly lucious in flavor.

    you started a strawberry debate!The little Swedish strawberries claim that they are more flavour intense, conforming to EU standards of the big southern varieties. Problem is waiting until July.

  20. I love strawberries, actually all varieties of berries. As was mentioned by a previous poster, I also have fond memories of picking strawberries while growing up in upstate New York.
    There is something so delightful about fresh, juicy strawberries. Definitely one of life’s simple pleasures meant to be savored often.

  24. Delicious! The pictures are beautiful too. I have my first strawberries of the season for my birthday. I do look forward to it each March. Oregon strawberries are a little later; so I have to eat California strawberries. Oh my, when Oregon strawberries are finally here, there is nothing better.

    I wanted you to know that when I saw this recipe I knew I must share it with my family. This weekend I finally made it and my very picky husband enjoyed it very much. I have to say that I could not find hazelnuts anywhere in Fargo,ND. I had to substitute almonds and it tasted alright that way. Thank you for a wonderful treat!
