Scrambled eggs never tasted so good as they did when French Husband made them this morning. When the eggs touched my taste buds I knew that this was the food of the gods. I asked, "Whatever did you do to these eggs? How did you get them so fluffy? And why haven't you ever made them before? Over twenty-some years and you pop out this secret. You are the breakfast king! Forego the baguette baby this is the Breakfast for Champions! Or is that with Champions?"

French Husband looked at me and said, "Too early, slow down."

You see I rattled that paragraph (above) in record-breaking English speed. Then I ran to get my camera. French Husband said, "Breakfast with what?"

Later Sacha came downstairs for breakfast, he looked at me as I hunched over the eggshells and said, "Mom why are you taking a photo of broken egg shells?"

Then he tasted the eggs. Looked up surprised. I pointed towards his Dad exclaiming, "He is the Breakfast Champion."

"Good eggs. Really good in fact."

"I am so off the hook, so done with cooking eggs, Daddy has won the award, and the honor.
Breakfast Cooker."

Sacha corrected me, "You mean Breakfast Cook."

I shook my not so pretty morning head, no, "Breakfast Cooker!"

Cooker… when the French first learn to speak English they often say, Cooker instead of Chef or baker or cook. French Husband has kept this little twist because I find it charming.

1988 First days of married life in France:

"You are a good cooker?" he said.
I said, "Kooky yes, cooker no."
He asked, "You are a kooky (cookie) cooker too?"

Charming now and ever so confusing then. Ah the beginning of a Franco / American love affair where the two people barely spoke the other's language.

At least they fed on good food and good….

Breakfast-for-champions

Scrambled Eggs:

Take three eggs and separate the yolk from the whites.
Whip the whites into Mount Everest like peaks.
Mix the yolks in a separate bowl with a touch of salt, pepper and milk.
Then fold the two together.
Melt some butter in the pan, when the pan is hot pour in the egg mixture.
Turn it gently over and around with a spatula.

Serve to your Queen, King, Prince, and or Princess and you will be the Champion Cooker.

    I took a class at the Ritz Escoffier in Paris and the chef made scrambled eggs, unlike any scrambled eggs I have ever had. He kept adding cream and lifted the pan off the heat, and stirred. Very little heat, lots of cream! Incredible!

    I make scrambled eggs several times a week, just love them. I thought I had finally perfected them but now…..will be giving this new technique a try tomorrow. I’m very excited. I love my eggs with a few chives and tiny bits of cream cheese added at the end (so it doesn’t melt too much). I must say, Sacha’s shirt is so nicely pressed! Him? You?

    Uncanny. Ever since Alex when he was little called me a “Good Cooker” (ironic as he refuses to eat almost anything I prepare for him !), Keith has kept the expression for me.
    Furthermore, Keith loves & makes great scrambled egg – I had it with smoked salmon & champagne for mother’s day brunch on Sunday after an earlier breakfast of Nutella crepes. All absolutely divine. I don’t want eggs 1st thing, but I love them for brunch x

    Oh YUMMY! So that’s how it’s done. The best omelette I ever had was in a cafe on Rue Monge in Paris. I’m going to try this to see if it replicates that fluffy goodness of it.

    Funny that…English husband is the egg cooker in this family as well. He makes the best scrambled eggs. I don’t know his exact technique and I don’t really want to know..No need really as I’ll never make them again. He is the main man!   28. Well, did Yann ever explain why he had been hiding this little talent away? Sounds yummy! THanks for sharing. Also I just read yesterday’s previous post and now I know why I have been finding it so hard to lose weight. I don’t snack or eat big portions but it has to do with lack of exercise….therefore in order to be motivated to move I need the streets of Provence. Now there’s an exercise regimen for you. Yep, I noticed when we were in Paris in ’08 for only three days I ate deliciously and lost 5 pounds….for all the walking!

    i tried the egg technique.
    i put a southern twist on them. i topped them with a mexican sauce from a restaurant (chuy’s)here in texas called creamy jalapeno sauce. i must say they were the best eggs i have ever eaten! simply scrumptious! i cannot wait to try them this weekend with fresh parmesan cheese.

  40. Corey, Your cooker brings tears to my eyes-My Grandma, a little Canadian French lady, cooked for a sorority house at UCONN. Those girls were so lucky. She did this to the eggs. They were magically transformed! She whipped up things like cream puffs, Napoleons, pies, cakes, with no effort at all! Some’s got it-Some’s ain’t!
