Leek Potato Curry Soup

French brocante soup tureen

 

Three leeks sliced into halos,

Four potatoes in their red jackets diced,

One long narrow sliced orange carrot to add color,

Put the halos and red jackets into a pan barely cover with water.

Bring to a boil,
Then lower the heat to simmer until the vegetables are tender (but not mushy)

 

Ladel

Add three heaping tablespoons of cream fraiche,
One tablespoon and a tad more of curry powder,
A dash of celery salt
The last bit of the white wine in your glass,
blend briefly so there is a mixture of creamy wonderness and chunky goodness.

Serve hot.

    Two things, first the name of this recipe does not sound appetizing. It needs some pizazz. Creamy Curry Chowder, maybe? Second, I’m not going to think about soup until the temperature drops below 90 degrees. Could you repost this in October?

    I’ve never heard it said to cut them into halos. I quite like that 🙂
    The soup sounds good to me but it is so hot here I only want cold foods. Will be saving for fall.

Using “halos” and “red jackets” to create a wonderful soup has a flare of temptation…coloring it orange, spicing it with curry, smoothing it with cream fraiche…oops, I’m afraid there won’t be a last bit of wine in my glass…better divvy that portion out before I start sipping. Your recipe sounds incredibly delicious. I’m sure this soup would be just as fabulous cold for your commenter Paulita…perhaps, a bit like Vichyssoise.
