Cinderella’s Pumpkin

   

My Mother called me Cinderella, not because I wore glass slippers, nor for my flare for transforming mice into men, but because I was the oldest child followed by four brothers. Needless to say, whenever a house-chore had to be done my Mother would call out, "Cinderella!"

Find a small pumpkin-

Cut the top off, keep it as a hat.

Scoop out the seeds, every single one.

Layer the pumpkin shell with:

Gobs of shredded parmesan

Chunks of crusty bread smothered with glazed golden onions,

Salt, nutmeg and pepper sprinkles

Laced between each layer swirls of white wine and fresh cream 

(Don't be stingy! Nor count calories.)

Put into a hot oven, and bake until it is ready to melt.

Add the top hat and serve with a cane…I mean a spoon.

  1. I just roasted three sugar pie pumpkins, pureed and froze them for future soups and bread. Your recipe sounds yummy! Looks like I’ll have to buy another pumpkin and some more Parm. tomorrow.

  2. That sounds fabulous!! I wish we had more varieties of pumpkin here – yet, we have the king of pumpkins (in my humble opinion), the Japanese kabocha. My favorite way to eat it is in pureed soup – hot or cold. I also love to slice it thin, saute in butter, and sprinkle with cinnamon and sugar. Yum!

  6. love your wonderful story of Cinderella and recipe! pumpkin anything is delicious. My daughter’s contribution to the Thanksgiving meal is a pumpkin cheesecake – the crust is made of crushed gingersnaps, pecans & butter.

    Corrie, You never fail to amaze and inspire me. I am the oldest of 4 brothers as well and it seems, that even after all these years, I’m 61, that younger men never fail to find me for “Big sister advise, tell it like it is, with no holds bar”.
    Anyway I can’t wait to try this pumpkin recipe. It sounds absolutely delicious!!!
