Pumpkin Dream Pasta

My Mother called me Cinderella, not because I wore glass slippers, nor for my flare for transforming mice into men, but because I was the oldest child followed by four brothers. Needless to say, whenever a house-chore had to be done my Mother would call out, "Cinderella!"

Find a small pumpkin-

Cut the top off, keep it as a hat.

Scoop out the seeds, every single one.

Layer the pumpkin shell with:

Gobs of parmesan,

Chunks of crusty bread smothered with glazed golden onions,

Salt, nutmeg and pepper sprinkles,

Laced between each layer swirls of white wine and fresh cream 

(Don't be stingy! Nor count calories.)

Put into a hot oven, and bake until it is ready to melt.

Add the top hat and serve with a cane…I mean a spoon.

  3. Had some scrumptious Sopa de Abóbora for lunch at a nice café in downtown Angra do Heroísmo, Terceira, with Farmboy Husband and one of my favorite Azorean authors (he treated!) one day last week.
    Also enjoy ravioli with pumpkin in the stuffing.

  5. This sounds really good.
    We have pumpkin soup regularly in winter. There are so many ways to vary it. Sometimes it’s Thai curry. Sometimes it’s with cream and gruyère. It adapts so well to so many different spices.

    All of the pumpkins, or Coushahs, that I use for deco in fall turn into something home made. sometimes others decorative pumpkins end up at my door, in hopes that the friend will get a pie, or pumpkin bread, or scone! I love baking when the weather cools1

  14. I’ve made this recipe — from a Dorie Greenspan cookbook — and the filling was wonderful, but my pumpkin, not so much. It was watery and tasteless, but was supposed to be a pumpkin for eating. Such lovely filling though!!
    I used to make pumpkin cupcakes for my children when they were little, with brown butter icing. Oh, that icing was amazing (and I am not an icing person!)! So far, that was the best pumpkin recipe. A Martha Stewart pumpkin cake recipe.
