Once is never enough.
Case in point Chez Dumonet, especially when it comes to the Soufflé.
Fortunately, Lisa and her daughter Emily invited me to Chez Dumonet for a second time.
Before we even opened the menu we knew we were having the Soufflé again, it is a work of art that cannot be missed. It is what French Husband says:
"C'est le petit Jésus en culotte de velours!"
I might go so far as to say the entire holy family in velvet shorts.

Chez Dumonet is one of the last true Parisian bistrots:
Waiters in long white aprons,
Double clothed tables,
Impeccable service,
Authentic bistro food with few choices for a vegetarian unless asked ahead,
Amazing wine list, with a good house red,
and the atmosphere that takes you straight back to the 1900s.

We had dinner first, though the Soufflé could have been enough.
The Soufflé is served piping hot with a glass of Grand Marnier.

When the souffle arrives, gently make a hole on the top, and then pour the grand Marnier in it.
Thankfully our apartment is in walking distance which allowed me to think, maybe some of those wonderful calories went away walking with the memory of a lovely evening spent.
