The Boy with the Empty Fridge

Egg Muffin corey amaro

The other day, while I was in Paris, I visited Sacha. When I opened his fridge it was bare, except for half a cup of coffee and about the same amount of soup, plus some day old baguette. In the cupboard he had rice and pasta. Talk about the starving artist. So like any any mother who cares about her child, I went to the grocery store with the goal in mind to stuff that Boy-Boy's fridge.

One recipe I made was my version of Egg Muffins, except I used the day old baguette he had on the counter.

First I rubbed olive oil inside the cupcake tin, then I added olive oil on the sliced baguette. I put one piece of baguette in the oiled tin, then added some chunky tomate sauce, followed by a generous pinch of grated cheese, I used comté, but any cheese will do. Next add the second slice of oiled baguette and follow with a generous soup spoon full of whipped (four or five) eggs with a pinch of salt and pressed garlic.

I baked it (375°) until the aroma called my attention.

Sacha called to say that when he opened his fridge he wanted to cry he was so happy, "I stood their eating away, it was pure pleasure! I didn't know where to start, so I just started."

He ate all the Egg Muffins standing at the fridge.

Hunger does that to an appetite.

  1. So basically it’s a savory pain perdu in a cupcake mold. Brilliant idea.

When I was that age that’s pretty much what my fridge looked like: empty.

YUM! and Hello Sacha! I just love your son-so interesting, so smart, amazingly mature for his age. What a great mom:)

Wonderful Mama; when I stayed with you I loved looking every time you opened your fridge. I love your stories of what you concocted when there is nothing in your fridge and Yann calls to say he’s bringing people home for dinner. You have a real talent for creating something special from very little…in more ways than one. X

I’m reminded of an episode of Lidia Bastianich’s cooking series where she makes dishes with staple ingredients that can be stored in the pantry (i.e., nothing perishable). Unfortunately, Farmboy Husband’s new low-salt diet precludes anchovies, capers and olives, but presumably other ingredients could be swapped in instead. And if Sacha’s cooking only for himself, he can always refrigerate or freeze the leftovers for another meal:

I love this story; you made me feel like I was standing in the kitchen with you! I’ve never heard anyone describe their internal cooking timer as “the smells beckoned you”-lovely prose!!!😃🙋🏾
