Cucumber Pasta Salad

On a hot day a refreshing pasta salad is the way to go. I made the pasta in the morning and let it set until dinner so that the flavors would intensify.

 

Cooked pasta,

Raw zucchini cut in fourths, but far from perfectly,

Peeled cucumber because in France they peel them and French Husband thinks it it wrong not too,

Flat leaf parsley, plenty of it,

Lemon juice, an entire juicy lemon will do,

Orange peel (if not fresh this is second best),

Green onions chopped finely nature's little halos,

Fresh ginger a tad will do,

Fresh garlic,

Pumpkin seed oil (though walnut mixed with olive would do), known as Kürbiskernöl,

Salt to taste.

 

Toss, and let chill for several hours.

Roasted Cashews would be delicious too.

    This looks delicious. I bet the pumpkin seed oil makes it really good. What variety of cucumbers do you have in France? Probably not the American ones that have bitter skins….

  2. Yes to walnut oil….what about avocado oil?
