Lunch for the Day

The trio of lentils cooked in a vegetable broth, rinsed and set aside waited for the dazzle of wonderment to follow.

Quartered Roma tomatoes,

Two handfuls of fresh mint,

Green onions sliced in ringlets cheered there are more of us than of the mint!

A cup of crumbled feta cheese,

Grated lemon and orange peel,

Curry, salt, and pepper,

A crushed garlic clove,

and a swirl of olive oil

Gently mix.

Add a touch of fresh mint on top to compete with the cheering green onions.

 

Lunch is served with a baguette and camembert.

  1. Wonderful! Tomatoes are vine ripening here…mint always fresh and garlic just harvested and dried last month. Perfect timing for adding another fabulous Corey dish to my menus. So appreciate your clear, easy to follow recipes. A feast for today!

  5. Corey, did you group up eating some dishes perfumed with mint? That’s a very Azorean thing. (Think of how it goes into Sopas, e.g.). There was a patch of mint outside my bedroom window, which from time to time my father would “renew” by mowing it down to a few inches tall. Oooh, how strong the scent of its oil was!

  9. Looks fabulous! So you cook the lentils in vegetable broth for about how long? What texture should they be? Then rinse them after cooking them? Always looking for new recipes and lentils are one of those things I want to eat more of.
