Sunday Afternoon Banana Bread

On a crystal clear morning, with the most amazing blue sky in Paris, Chelsea ran fourteen miles as she is and has been preparing for a marathon this April. I met up with her after her run for lunch and to hang around and enjoy each other's company. Later in the day, we made pumpkin soup and banana bread.

 

Banana Bread

In a bowl mash two overripe bananas,

add a teaspoon of vanilla,

a large egg,

1/3 cup of full yogurt,

1/2 cup of sugar 

Mix until creamy.

Then add  1 1/2  cups of flour,

a pinch of salt,

1/4 cup of raw shaved coconut

1/4 cup of cranberries

1/4 cup of shaved almonds,

and mix together with a few generous whips.

Bake in a preheated oven 175 degrees for 30 to 40 minutes,,

you might want to cover the top mid way if the bread becomes to brown.

  1. It sounds like the perfect way to spend a Sunday afternoon!
    I s tarted decluttering the basement and will do more tomorrow. A big pile ready for Goodwill. The garbage and recycle bins are full and ready to be picked up in the morning. I worked in the garden for 45 minutes with the company of April, May and June, the hens. They talked constantly and seemed to enjoy weeding the vegetable garden.

    I got up, checked on my reservation for an upcoming trip to Paris by googling the address and saw a post from tripadvisor.com from a person who stayed there and said it had bedbugs! Not nearly as good a day as baking banana bread, lol. I cancelled my res tout de suite and started frantically looking for something else. I did walk three miles and make a nice soup with sweet potatoes though.

  4. P.S. Best of all, we didn’t even have to cook dinner, just reheat some leftover homemade Borscht, then plop in large dollops of sour cream, for our main course!

  7. My husband makes banana bread when ever we have over ripe bananas.
    What did I do today, hummm? Church this morning, read the newspaper and a chapter in a book this afternoon, then this evening watched the closing of the Olympics. It was a good, but really wet day to stay inside.

    I am going to try the bread but i’ve never baked anything at 175 degrees. Sounds yummy.

  9. Played with our grandchildren all day. Took them to the big Barnes & Noble so they could ride the escalators!! Went to Whole Foods for pizza and later had ice cream cones.

    Well we had banana bread too – along with many other yummy things, after playing a concert of Piazzolla tangos in the afternoon – so much fun!

    Sounds yummy, will have to try this recipe! I’ve always admired folks who run, especially marathons, something I could never see myself (and my old bones) doing. My chiropractor does 100 mile marathons and I’m always amazed he lives to tell the tale!
