You know you are in Provence when you see red-tiled roofs, lavender fields, sunflowers with poppies waving their last farewell, bouillabaisse sharing hints of garlic and saffron, served first with a Pastis, painted shutters in almond green, sky blue, and faded sunshine (if there is such a season in Provence!) Autumn-colored pottery, goat cheese wrapped in chestnut leaves, and the palest rose wine…

Poppies are the first Provencal flower to bloom, usually in May and sparingly in June. Next comes lavender budding late June and in full glory in the first week in July. My favorite place to see fields of lavender is in Valensole. The luckiest moment, which cannot be predicted as it is a rare sight, is to see poppies, lavender, and sunflowers blooming together. I haven’t been lucky enough to experience this yet,

but I hope to one day.
